For example tasks that the user is already familiar with. In a previous
project we designed an application which was a translation of an existing
paper form that a user can now fill out online.

The paper form was in use for a long time and users were very familiar with
it. To facilitate the transition from paper to online, we included a site
map/index.

This site map could be viewed in two states:
1) number-based: all fields in the form were numbered, so the site map
offered these numbers for users that knew them from the paper form and
wanted to quickly look 'm up.

2) term-based: for users who knew what they had to do but weren't sure of
the exact location of the task.

Very specific it may be but you did mention 'what user task would ideally
involve...' ;)
