Generally speaking, what I've seen in usability tests is that kids have
incredible curiosity but low patience. So good interaction makes lots of areas
"clickable" to feed the curiosity and retain the attention.
noggin.com is a fine examples of a sites for that age group.
If you're in the US, you'll want to learn about the Children's Online Privacy
Protection Act (COPPA). Even if you're outside the US, the guidelines might be
helpful.
