I haven't used it extensively myself, but OmniGraffle from OmniGroup looks great. You have to be using Mac OS X to run it, but it seems worth the money.

After the huge clamor for a Mac product for a long time now, I'm sure there
must be something available. We experimented with Conceptdraw, but it
wasn't easy to use. I still revert to Illustrator most of the time.

Looking for flowcharting software for the Mac. Has anyone tried Glyphix for
OS X?

I'm aching to use my Mac more but have not found an application to replace
Visio. Any other suggestions are welcome as well. I hesitated to ask this
because it may have been brought up before. Alas, the archive fails me.
